Prep Time:    20 minutes
Cooking Time:    Approximately 30-40 minutes, or 5 minutes per lb for medium-rare
Serves    10-12 people

Ingredients
1 C hoisin sauce
5 T rice vinegar
4 T soy sauce
2 T garlic, chopped
¼ C scallion, green and white parts, chopped
3 T honey
6 1/2 – 7 1/2 lb boneless leg of lamb

Directions
Prepare the marinade in a medium bowl by mixing hoisin sauce, rice vinegar, soy sauce, garlic, scallions and honey. Mix together well. Set aside. Place the lamb in a shallow baking dish or plastic bag. Pour 3/4 of the marinade over the lamb, rub into the meat. Save ¼ of the marinade to serve with your meal. If marinating in a baking dish, cover with plastic wrap. Place lamb in the refrigerator to marinate for at least 4 hours, preferably overnight.

Heat a grill to medium heat and place the lamb on one side of the charcoal to avoid burning. Cover grill with lid. Turn every 30 minutes. Use an oven thermometer to check the meat for doneness. Internal temperature at the thickest part of the meat for rare is 135 degrees, for medium rare 140-150 degrees, for well done, 160+ degrees. (approximately 2 hours)
Note: If you rather roast the lamb in the oven. Preheat oven to 375 degrees. Once you put the leg of lamb into the oven turn down the temperature to 325 degrees and roast until desire internal temperature (see above, approximately 1.5 to 2 hours.)
Cool meat for 20 minutes before slicing.

Serve with remaining marinade, white or brown rice, vegetable and salad.
