Healing Place Medfield’s Wholesome Gluten-Free Granola

This is a wholesome and delicious granola that is lightly sweetened. I probably put too much fruit and nuts in my granola but that is the way we like to eat it in the Lui household. Since we have a gluten issue at my house, we always purchase gluten free oatmeal, but you can substitute with any other kind of oatmeal you like, just not the quick cooking type. Did you know that all oatmeal is gluten free? What makes it not gluten free is how the oatmeal is manufactured. If it was manufactured in a factory that manufactures non-gluten products, than the company cannot label it gluten free.

Prep Time: 25 minutes
Baking Time: 40-45 minutes
Serves: 16
Recipe can be doubled. If doubled, add 1 tablespoon of cinnamon and 1 teaspoon of nutmeg

Preheat oven to 325 degrees and prepare one very large or two medium sized roasting pan(s) lined with parchment paper and set aside. You need a deep pan, the stirring can be quite messy.

In a small bowl, mix together:
½ cup of vegetable oil
¼-1/3 cup of maple syrup (depending on how sweet you like it)

In a large mixing bowl, combine:
2 lb Gluten Free Oatmeal (I use Bob’s Red Mill)
1/4 cup tightly packed brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt

Now add nuts and seeds to the large bowl. You can use any nuts you like and any amount you like or you don’t have to add any at all. In my granola I like to add:
1/3 cup sliced almonds
1/3 cup walnut halves
1/3 cup pecan pieces
1/3 cup Brazil nuts, chopped
1/8 cup flax seeds
1/3 cup raw sunflower seeds
1/3 cup pumpkin seeds
¼ cup coconut flakes

Combine all ingredients together and mix until everything is coated. Pour granola mixture into the roasting pan(s) and bake for 15 minutes. Stir and repeat 2 more times for a total of 40-45 minutes or until the granola is light brown color. Cool completely and mix in:

1/3 cup dried cranberries,
1/3 cup raisins
1/3 cup dried banana slices

Store in an air-tight container for two weeks. (In the Lui household we doubled the recipe and it has never lasted more than two weeks.) So the shelf life can be longer.
