Do you and your family enjoy good BBQ meats? We have included a dry rub and sweet and spicy favor BBQ sauce for your next cook out. The sauce is absolutely delicious. It is tangy and sweet at the same time. The extra kick is the curry powder and the intense BBQ favor comes from the hickory-favored salt. You can find both spices in the spice isle at the supermarket.

Prep time: 15 minutes
Cook time: 2-3 hours
Serves 4-8 hearty appetites

Enough sauce for 2 racks of pork, 3 lbs each of Country, St. Louis style or baby back ribs with extra to serve with the ribs.

Dry Rub
In a bowl, mix the following ingredients and coat both sides of the ribs heavily (any leftover, uncontaminated, dry rub may be kept in a contained for future use.)

1/4 cup dry oregano
2 teaspoon of dry garlic
1/4 cup dry basil leaves
2 tablespoon of dry thyme
1 teaspoon of pepper
salt and pepper to taste

Sweet and Spicy Curry Barbeque Sauce
In a large bowl combine all ingredients and let stand for at least 1 hour, covered, in room temperature or covered,Ā  in the refrigerate for up to 5 days.

1 1/2 cupĀ  catsup
1/4 cup either regular, white wine or rice vinegar
1/2 cup lightly packed brown sugar
2 tablespoon curry powder
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke
1 teaspoon of pepper
3-5 cloves of minced garlic

Grill
In a covered grill arrange hot coals on one side and have a drip pan on the other. Test for medium heat above the pan. Place ribs, fat side up, on grill rack over the drip pan but NOT over coals. Lower grill hood. Grill for 1 1/2 to 2 hours until meat is very tender, almost falling off the bones, basting generously with sauce, on both sides for the last 40 minutes of cooking. You may want to baste each side two or three times depending on how much sauce you have. If you have any leftover, uncontaminated sauce, you may serve with the ribs. Serve with white rice, potato salad and cole slaw.
