When I was a kid, my mother used to make watercress soup two to three times a week. She claimed that this soup could help with anything that ails you, from the common cold to digestive issues, constipation, etc.

Now that I have a family, I make this soup for them for its health benefits. Did you know that watercress is considered to be one of the highest vegetables on the of super foods list, and it is antioxidant-rich?

Prep time: 20 minutes
Cooking time: 2.5 hours
Serves: 24 8 oz portions
Recipe can be halved

Ingredients:
4 bundles of fresh watercress, soaked in water with a tablespoon of salt for 45-60 minutes and rinse twice after soaking (this will kill off any unseen contaminants.) Drain and set aside
3-4 lbs of skinless chicken (either parts or a whole chicken)
2″ long fresh ginger, crushed with the side of a knife to flatten
4 whole scallions, chopped
4-5 whole garlic cloves, crushed
1 tablespoon of salt
2 tablespoons of white vinegar
12 cups of cold water

Directions
In a large stock pot, add water and the chicken parts. Bring the water to a boil on medium – high heat. Add the remaining ingredients to the water and bring to a boil. Turn the heat to low and simmer for 2.5 hrs. Discard chicken parts. Let cool and skim the top of the soup of excess fats.
You can drink your soup with or without the watercress in it. The soup is quite yummy and very healthy. The soup can be drunk at any temperature other than cold.

Notes – vinegar encourage minerals to leach out from chicken bones.
Ginger and garlic – supports digestion and adds flavor.
Watercress – add watercress ONLY after the water boils to prevent bitterness.
