Ā Ingredients:

4 large or extra large eggs

1/4 C room temperature water

3 t oyster-flavored sauce

Vegetable oil to cover bottom of pan

1/4 C onion, chopped (optional)

1 C bean sprouts, fresh and not canned

1/2 C cooked chicken, pork, or uncooked shrimp, sliced into bite size pieces

Directions

In a large mixing bowl, add eggs, water, and oyster-flavored sauce and beat until foamy. Set aside.

Heat a large skillet over medium heat until hot. Ā Pour in enough oil to cover the bottom of the pan. Ā If using onion, add the chopped onion to the heated pan and sautĆ© for 2-3 minutes until brown. Next, add bean sprouts. Ā Continue to sautĆ© until bean sprouts are slightly wilted. Ā Thin out bean sprouts mixture until there is a single layer covering the bottom of pan.Ā  Add egg mixture and the cooked meat or uncooked shrimp. Ā Move pan around to cook eggs slightly. Ā With a spatula, pick up the edges so that the eggs will run under to cook. Ā Continue cooking until eggs are set and golden brown underneath.Ā  With a spatula, flip egg in sections (flip once.) We like our eggs a little runny serve with rice.
