Quinoa is healthy meat substitution and is considered a super food. It is a whole food grain that is considered an ancient grain that has been eaten for thousands of years. Quinoa is especially popular among vegetarians and vegans. Quinoa has so many health benefit, itā€™s gluten-free and low-fat, helps to lower cholesterol, adds fiber to your diet and high in protein and a great source of iron. According to USDA, 1 cup of cooked quinoa contains 8.14 grams of protein, it is suggested that men eat a daily of 56 grams and women 46.

For the dressing I created a mustard vinaigrette dressing but you can use any dressing you like.

Ingredients
In a bowl combined –
5 cups of cooked quinoa (1 cup of raw quinoa cooked according to direction)
2 cups of raw baby kale
1 or 2 cups of cooked green beans cut in bite size pieces
Ā½ cup of dried cranberries

Mustard Vinaigrette
In a bowl whisk together all ingredients except for the oil. Slowly add the oil in a stream.
1 1/2 tablespoons Dijon-style or any spicy mustard
3 tablespoons finely chopped shallots or scallions (white and green parts)
2 cloves of finely minced garlic cloves
1/4 cup either rice, white wine vinegar or fresh lemon juice
3/4 cup extra-virgin olive oil
Salt and pepper to taste

Pour dressing over salad and blend. Enjoy.
