I made gluten-free molten chocolate cupcake this weekend. The recipe calls for wheat, but I substituted gluten free flour instead. It was absolutely delicious!

Prep Time: 20 minutes
Cooking Time: 10 minutes
Serves: 10-12

Ingredients
1 cup unsalted butter, room temperature
1 (4 ounces) 60% Cacao Bittersweet Chocolate Baking Bar
1 cup semisweet chocolate chips
5 large eggs or 4 extra large, room temperature
1/2 cup sugar
1/2 teaspoon vanilla
Pinch of salt
4 teaspoons gluten-free or all-purpose flour
10-12 foiled, baking cups

Just about everyone knows when I, certified Reflexologist Helen Chin Lui isn’t working with clients or writing and researching. I am cooking. Most would say that this is my therapy to keep me balanced and it is probably true. To me, there is nothing more satisfying than a good home cook meal can be made in a short time with minimal ingredients.

I consider a good meal to be my reward for a day of hard work.

Most of my recipes are easy to prepare with 4-6 ingredients. From refrigerator to the table within 40 minutes. I cook mostly gluten-free, dairy free, with eats a somewhat vegetarian diet. Since I am addicted to grains, I have to be careful with how much carbohydrates to include in my diet.

Here is a gluten free pancake recipe that I created with the ingredients I had in hand in a moments notice. I didn’t have a gluten free pancake flour so I  used a pie crust mixture instead. The pancakes were so good that no one could tell they were gluten-free.

Because I am so passionate about making food, I am always creating new recipes or reinventing old ones. I have created a #glutenfree #chocolate #lavacake recipe for my son who has gluten #intolerance. Easy and yummy!

To make gluten-free lava cake: follow a recipe on the back of Bob’s Red Mill chocolate cake mix. This mix makes about 15 cupcakes. Set aside.

Paper-lined cupcake pan and fill batter 1/2 way. Put a dollop of solid (not melted) Brigham’s Hot Fudge sauce in the center of the batter, (about one heaping teaspoon,) add another tablespoon of cake batter on top and bake according to directions on the package.

This is a wholesome and delicious granola that is lightly sweetened. I probably put too much fruit and nuts in my granola but that is the way we like to eat it in the Lui household. Since we have a gluten issue at my house, we always purchase gluten free oatmeal, but you can substitute with any other kind of oatmeal you like, just not the quick cooking type. Did you know that all oatmeal is gluten free? What makes it not gluten free is how the oatmeal is manufactured. If it was manufactured in a factory that manufactures non-gluten products, than the company cannot label it gluten free.
