Ingredients:
4 large or extra large eggs
1/4 C room temperature water
3 t oyster-flavored sauce
Vegetable oil to cover bottom of pan
1/4 C onion, chopped (optional)
1 C bean sprouts, fresh and not canned
1/2 C cooked chicken, pork, or uncooked shrimp, sliced into bite size pieces
Directions
In a large mixing bowl, add eggs, water, and oyster-flavored sauce and beat until foamy. Set aside.
Heat a large skillet over medium heat until hot. Pour in enough oil to cover the bottom of the pan. If using onion, add the chopped onion to the heated pan and sauté for 2-3 minutes until brown. Next, add bean sprouts. Continue to sauté until bean sprouts are slightly wilted. Thin out bean sprouts mixture until there is a single layer covering the bottom of pan. Add egg mixture and the cooked meat or uncooked shrimp. Move pan around to cook eggs slightly. With a spatula, pick up the edges so that the eggs will run under to cook. Continue cooking until eggs are set and golden brown underneath. With a spatula, flip egg in sections (flip once.) We like our eggs a little runny serve with rice.
