This salad may be served on a bed of lettuce or served in a wrap. Taste delicious warm or chilled.

1-1/4 C chicken broth
1 C cooked, diced, chicken
1 C uncooked couscous
1 T margarine or butter
3/4 C olive oil
3 T fresh lemon juice
1 t salt
1/2 t black pepper
1/2  t ground coriander
1/2 t dijon style mustard
1 large minced, garlic clove
2 diced, scallion
1 large, cored and diced, crisp apple
1 large, diced, rib celery
Lettuce leaves


In a small saucepan, bring chicken broth to boil with lid on. Add couscous and margarine or butter. Bring to a boil again with lid on. Remove from heat and let stand for 5 minutes. Fluff couscous with a fork and let cool (makes about 2 C of couscous.) Set aside.

Salad dressing: In another bowl, mix olive oil, lemon juice, salt, coriander, mustard, garlic and pepper and blend well.

To assemble: In a large bowl, combined cooled couscous, cooked chicken, scallion, apple and celery. Mix olive oil mixture again and add to couscous mixture. Toss to coat all ingredients.
