Comfort food at its best. You can make this dish vegetarian by eliminating the sausage and using vegetable stock. This is a very versatile soup recipe; it can be reduced to half or doubled.
Prep time: 30 minutes
Cooking Time: 1-2 hours
Serves: 12
Ingredients
4 tablespoon olive oil
1 large chopped white onion
2 large sliced carrots
2 large sliced celery
4 peeled and chopped garlic
10-12 cups of vegetable or chicken stock
1 bag of rinsed petite lentils
2 (15 oz) cans of fire-roasted tomatoes
2 bay leaves
Ā¼ teaspoon of thyme leaves
Ā¼ teaspoon of ground pepper
1 teaspoon of salt (or to taste)
1/2 pound of diced Chorizo sausage (optional)
8-12 oz of baby kale or spinach
Directions:
In a large stock pot, heat oil until hot. Add garlic and sautƩ until brown. Add onion, carrots and celery and sautƩ for 6-7 minutes until vegetables are wilted and translucent.
Add the stock and the remaining ingredients except for the greens and salt. Stir. Bring heat to medium high. Skim off any form that comes to the top. Turn heat down to low and simmer with the lid partially covered. Simmer for about an hour, stir occasionally. Depending on how old the lentils are, cooking time can be anywhere from one to two hours. If the soup gets too thick, you may add more stock. Once the lentils are tender, add the greens and salt. Stir.
Serve with bread and a salad. The soup tastes better the next day.

I would love to do the liver detox. Can you send me instructions please. Thank you
I don’t have an actual liver detoxing program that I can share with you. I do an annual detoxing. In addition eating plenty of fresh vegetables and fruits, I will eliminate coffee, alcohol drinks, sugar, dairy, red meat and carbohydrates for the first week. On the second week, I will start to add fish, chicken and legumes. To help me to eliminate I drink plenty of water with lemon and I will take supplements to help me to eliminate.
