If Certified Reflexologist Helen Chin Lui isn’t helping clients, she is cooking and creating healthy recipes. Here is a favorite summer recipe in the Lui’s household, Black Bean and Corn Salad. Easy to make, nutritious and full with fiber.

Prep Time: 25 minutes
Cooking time: 0 (unless you cook black beans add 2 hours)
Servings: 4-6

Dressing – In a bowl, bottle or cup add the following, mix well and set aside.
2 tablespoon lime juice (1 fresh lime)
½ cup olive oil
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon oregano
2 cloves of crushed garlic

Salad Ingredients
2 cans 15 oz regular or reduced-sodium black beans, drained and rinsed (instead of a canned black beans, you can make black beans by soaking 1 pound in a pot of cold water overnight. The next day, cook on low heat for about 1.5- 2 hours until tender. At the end of the cooking time season with 1 teaspoon of salt.)
2 cups of fresh* or thawed frozen corn (about 2 ears of fresh corn)
1/2 to whole jalapeno pepper, seeded and finely chopped (wear gloves when handling and do not get any of the juices in your eyes.)
1 cup cherry tomatoes cut in half
½ cup of sliced celery
1/4 cup of chopped red onion or 3 scallions (white and green parts) chopped fine.
1/4 cup chopped, fresh cilantro

In a large bowl, combine beans, corn, peppers, tomatoes, onion, and cilantro and set aside.
Pour mixed dressing over bean mixture, stir, and let sit for at least one hour in the refrigerator.

*To cook fresh, crunchy, sweet corn – in a large pot bring water to a boil, then shut off heat, put
fresh corn in and let sit for 2 minutes without a pot lid. To cut corn kernels from the cob – break
the corn in half, stand the corn on cut end on a plate and run a knife against the corn core.
