Shepard’s Pie Recipe to Support Your Root Chakra

Traditionally, Shepard’s Pie is made with ground lamb and leftover vegetables. I like to use a combination of ground beef, pork, and chicken. If you have leftover mashed potato, this will save you 60 minutes or preparation time.

Prep time:

  • Mashed potatoes, peel and cook time – 45 minutes (left over potato – 0 time)
  • Meat filling – 25-30 minutes
  • Meat filling cook time – 20 minutes
  • Broil time – 2-3 minutes
  • Serves – 6

*Recipe can be doubled or tripled.

Mash Up Your Potato

Peel 1 1/2 pounds of potatoes (I like Idaho potatoes.) Cut into big chunks. Place chunks in a pot of water to cover and bring to a boil and then lower heat and cook until potatoes are tender. Before mashing, add to your liking, 2 tablespoon of butter, salt, pepper and 1/2 cup of  milk, or make it  the way you like.

Hearty Meat Filling 

Ingredients

  • 2 carrots, peeled, chopped
  • 2 ribs of celery, chopped
  • 1 large onion, peeled and chopped
  • 2 cloves garlic, minced
  • 1 1/2 pounds of either of these combinations: ground lamb, 85% beef, chicken or pork.
  • 3 cloves of garlic chopped
  • 1/2 can of 6-ounce tomato paste
  • 1/2 cup chicken broth or water or red wine
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons freshly chopped rosemary leaves
  • 1 teaspoon freshly chopped thyme leaves or 2 teaspoons of dry thyme
  • 1 cup fresh or frozen corn kernels, thawed
  • 1 cup of fresh or frozen carrots, thawed
  • 1 cup fresh or frozen English peas, thawed
  • salt and pepper to taste

 

Cooking Directions

Add 3 tablespoons of oil and garlic in a large skillet on high heat and cook until you can smell the garlic, and it’s lightly brown (2 minutes.) Add onions and cooked until golden brown. Add chopped and fresh carrots, celery, rosemary, and thyme, and cook for 3-4 minutes until vegetables have wilted.

Step 2: Add chopped meat and cook until slightly pink. Using your spatula, break up meat into small pieces. Add liquid, tomato paste, Worcestershire sauce, and cook until the meat is cooked through. Then add corn and peas and mix until blended.

Now Assemble

First layer: Add your meat mixture to the bottom of a large rectangle, round 8-10″ pan, or 2 pie pans and spread evenly. Top with mashed potatoes and spread evenly, covering the meat mixture and corners. If you are not planning to bake immediately, you can refrigerate shepherd’s pie for up to two days. Before baking, bring the pie out of the refrigerator for at least three hours to bring it to room temperature.

Bake at 325 degrees until the Shepard’s pie is heated through. If you want a golden brown top, broil for 2-3 minutes. Wait to cool slightly before enjoying.
